Healthy Recipes for Spring

Easy Healthy Recipes for Spring

Every time spring rolls around we start to come out of hibernation and shedding our thick layers. A lot of times, unless we have sticking to our healthy meals, we realize the extra pounds we have gained during winter. Or maybe you just want to have a fresh start on eating healthier foods. Whatever that may be, spring always feels like a fresh start and makes me want to get outside, be active, and eat fresh healthy food!

Eating healthy doesn’t have to be difficult either! I love simple recipes that don’t take forever or use a million ingredients. No one has time for that! So today I’m sharing some of my favorite healthy recipes, that are also easy, to try out this spring!

Strawberry Cucumber Spinach Salad from Yay! For Food

Look at this! This salad basically screams spring! I am a huge fan of salads and could eat them everyday especially during spring and summer. This salad has all my favorite things like cucumbers, strawberries, and feta cheese. It’s topped with an apple cider vinaigrette. Perfect and easy spring meal. Check out this recipe HERE!

Cherry Tomato, Leek, and Spinach Quiche by The Food Charlatan

Lately I have really been loving quiches! I used to think quiche was such a hard thing to make, but after finally making one, they are so easy! And delicious 😉 This recipe has cheery tomatoes, spinach, and used almond milk instead of milk or cream. Check out this healthy recipe HERE!

Sheet Pan Lemon Chicken and Asparagus by Home. Made. Interest

This recipe only has 7 steps and one of them is to enjoy! So quick and easy, which I love. This year I have been experimenting with citrus in foods more and have really loved using lemon in recipes. It goes great with pasta and also chicken like in this recipe. Check this healthy recipe out HERE!

Now let’s get to cooking! What’s your favorite spring recipe?

Five Delicious Recipes for Fall

Five Delicious Recipes for Fall

Since moving to Finland I have realized something about myself, I love baking! I find it not only relaxing, but also fun. One of the boys recently told one of his friends that stayed for dinner that, “I do bake a lot.” This is when it hit me, I do bake a lot and not because I just think they will like the food, but because I actually enjoy it! Some of the recipes are baking and others could be for meals! Here are my favorite recipes for fall:

Cinnamon Apple Bread

Apple Cinnamon Bread

I found this recipe on The Happier Homemaker’s website and I LOVE it!

In this recipe you layer the bread and apple cinnamon/bread sugar mix, which creates a great balance of bread and topping! I think my favorite part is the brown sugar cinnamon mixture 🙂

Super Simple Banana Bread

This recipe comes from Eazy Peazy Mealz (it took me five tries to write that because of autocorrect lol)

I am a big fan of banana bread! It is so easy and versatile. You can make it just the way it is or add cinnamon, chocolate chips, or blueberries! The possibilities are endless.

I really like this websites recipe also because the writer, Rachael, gives different ways to make the recipe healthier. Who doesn’t like that?

Pumpkin Spice Cookies

Pumpkin spice has to be on my list of favorite fall things! One thing I do miss being here in Finland is that they do not make a big deal out of fall and fall flavored things. I mean it’s September shouldn’t there be fall flavored everything with Halloween decorations! I mean it is already September and I have not seen one Christmas decoration out 😉 Just so Tasty posted this recipe for pumpkin spice cookies and they are SO GOOD! A perfect sweet and chewy cookie.

Do yourself a favor and make these 😉

Homemade Chili

Chili to me just screams fall. It reminds me of tailgates at IU football games.

This chili recipe is from Sprinkle Some Sugar. Pair it with some cornbread and you have yourself a perfect fall meal!

Ground Turkey Sweet Potato Skillet

It took me a while to like sweet potatoes, but now I can’t get enough of them! I eat them all year, but I think this recipe is savory and perfect for colder weather.

This recipe comes from Primavera Kitchen. Olivia, the writer for this website has a lot of healthy recipes that I love!

I hope you enjoy these as much as I do! What are your favorite recipes for fall?
